s.l.m Cultivation method: cordone speronato Grape - harvest: by hand during
the first decade of October Vinification: wilting of the grapes on the
mats from October to January Ageing: 4 years in “caratelli” (small oak
barrels) with a little bit of “madre” (the lees of the last production)
Alcohol content:: at least 15,5%
Tasting
Dal colore ambrato con intense sfumature dorate, questo vino regala al
naso un groviglio di sentori di frutta matura in confettura (fichi e albicocche)
e agrumi canditi. Ha un gusto rotondo e asciutto, di delicata dolcezza.
Serving temperature: 12°-16° Food matching: usually to the end of a meal
with dry almond’s biscuit; excellent with herb cheese (Gorgonzola, Roquefort)

Specifing
Defined in the past Vino Pretto (a pure wine, no mix with water), the
Vino Santo is today a symbol of the Tuscany country food style; in this
area every meal to come to an end with a small glass of this delicious
nectar. As tradition, selected grapes of Malvasia are wilted on mats for
about 4 months in a ventilated room. The must fermentation is very slow,
the wine needs at least 4 years in the caratelli barrels, leaving inside
the lees of the last production. In this way it obtains a dessert wine
with a characteristic and unmistakable taste, something like the best
sherry. Vin Santo has an incredible ageing’s capacity: in a good cellar
with the right temperature is possible keep the bottle more than 20 years.
